Can you believe it’s June already?! Me neither. I also can’t believe that I shopped for a whole week worth of food when I am going to be away at a conference for several days. Whoops! I’ll definitely need to prepare meals in the order in which the ingredients will spoil first because much of these meals will spill over into the following week.

  • Tofu Teriyaki with Pineapple/Mango Salsa
  • Black Bean Salad with Cuban Rice and Salted Tomatoes
  • Dijon Broccoli and Rice
  • Millet Bowl Topped with Mushroom & Kale Gravy, Roasted Golden Beets
  • Potato & Onion Pizza
  • Raw Tomato Chili with Taco Meat
  • Broccoli & Cheese Soup
  • White Bean Veggie Dip

Weekly Menu ~ May 28th

Keeping a photo diary of my daily food consumption really helped me get back on track with clean, vegan eating and allowed me the opportunity to see where I have to adjust my diet to ensure I am getting all the necessary nutrients.

This week I’ll been dining on a lot more greens and will continue with fruit consumption rather than relying on sweets.

  • Homemade Veggie Burger with Coleslaw and Corn
  • Caesar Salad with “Bacon” Bits
  • Vegan Mac & Cheese with Broccoli

Weekly Menu – May 5, 2012

Although it’s been quite some time since my last post I am looking forward to sharing weekly menus with you again. I am currently preparing some new posts about cookbooks, vision boards, and fitness but I was wondering if there were any topics you’d like to see covered in the future. This blog not only exists to chronicle my journey but to also help you find health, wellness, and balance in your life so I’d love to hear from you what you’d like to know more about (topics, types of recipes, etc.).

This week’s menu features a trip to my favorite Indian restaurant along with some delicious, homemade meals.

Weekly Menu ~ March 31st

I cannot believe it is almost April! Where the heck has the year gone?

I’ve been super busy lately and was really thankful that I prepped all my meals over the weekend. I didn’t have to cook anything during last week which left more time to get bikini ready.

I started working out with my friend Kyra aka The Get In Shape Girl and I am having so much fun. I also signed up for a two week yoga membership at Raffa and have gone to five class already… who knew that I’d love yoga?!

This week I will try and go to 5-6 yoga classes and will continue with the GISG workouts all while trying to study for the Personal Training exam that I have coming up in a few short weeks.

The bottom line is that I need to have a week’s worth of menus that I can prep in advance in a short amount of time.

This is what I came up with:

  • Spinach Pasta with a Garlic Cream Sauce
  • Barley Bliss Casserole (from Chloe Coscarelli’s new cookbook)
  • Seitan Piccata
  • Jewish Comfort Food ~ kasha and shells with potato latkes
  • Red Pepper & Broccoli Stir Fry with Miso Soup

Weekly Menu March 24

I have a lot of cooking ahead of me this weekend so I am going to post my weekly menu early. My plan is to wake up as soon as Whole Foods opens on Saturday so I can be in and out in a half hour without having to see anyone, get home and start prepping meals for the week. If all goes as planned I’ll be able to post the recipe for Chocolate Eclair Cupcakes this weekend too!

Lately, I’ve been cooking exclusively from the Happy Herbivore cookbooks but I recently picked up a brand new cookbook from the library and it looks amazing!

In my opinion what makes a great cookbook is one in which I am interested in trying 80% of the recipes and most recipes have a photo.

For the first time ever I have found a cookbook where I want to try every single recipe. Provided this week goes as well as expected I will certainly be adding this book to my collection.

I made this week’s menu extra long because I was disappointed with last week’s meals and figure if I increase the number of meals I’m creating the better chance of success.

Worst case scenario: I’ll carry over any meals I don’t make to next week.

Breakfast & Snacks

  • Homemade Yogurt (for Strawberry Barley Breakfast Bowl)
  • Chocolate Brownie Larabars
  • Blueberry Almond Chia Squares
  • Tofu Scramble with Homemade Ketchup
  • Chocolate Chip Cookies (I swear I will only eat one or two as part of this week’s cheat)

Dinner Entrees

  • Chimichurri Tacos
  • Penne Alla Vodka with Garlic Bread
  • Caribbean Vegetables with Coconut Rice
  • Meatloaf with Garlic Mashed Potatoes
  • Stuffed Portobello Mushrooms with Asparagus
  • Chicken Pot Pie minus the chicken and the pie ­čÖé
  • Kasha with Caramelized Onions & Mushrooms, Garlicky Greens, and Roasted Carrots

Weekly Menu March 10

Tomorrow starts the no sugar challenge so I need to ensure that I have lots of healthy snacks available to munch on so this week’s menu is quite lengthy, however, I didn’t want to break the bank so I tried to use ingredients that I had on hand as much possible.

This will be the longest weekly menu to date and the shortest grocery list, whoot whoot!

Dinner

  • Chickpeas & Dumplings
  • Broccoli & Red Pepper Stir Fry with Shitake Miso Soup
  • Taco Salad
  • Crab Cakes, Maryland Style Kale, and Cream of Crab Soup – sans Crab ­čśë
  • Black Bean Chili Pizza

Lunch

  • Kale Salad
  • Tuna Salad
  • Tomato Soup & Grilled Cheese

Blueberry Goodness

  • Buckwheat Pancakes with Banana & Blueberries
  • Blueberry Chia Breakfast Pudding
  • Blueberry Clif Bars

In addition to some serious batch cooking, today we’ll be celebrating my husband’s birthday

And by celebrate I mean he is going to work a double shift at the pizza shop and I am going to watch a Law and Order Marathon.

Maybe he’ll get lucky and I’ll find some time to make Chocolate Chip Muffins.

  • Acorn Squash with Wild Rice and Sage Butter
  • Roasted Garlic Quinoa and Spinach with Maple Root Vegetables
  • Mushroom Burgers with Twice Baked Potatoes and Purple Slaw
  • Chili Sweet Mango Noodles
  • Kale Salad
  • Blueberry Energy Bars

Rounding out this weeks healthy meals I am going to try and recreate an eclair – vegan style. Wish me luck… if this is successful I will be showcasing them at my friends birthday party!
